POULTRY BASES

We have a great relationship with Poultry!  We have created over 400 different Chicken and Turkey Concentrates, from Natural, Bone Broth, Clarified Stock, Asian Pho, and more.  We are experts at creating clean label, organic, reduced and low-sodium chicken bases that taste great.

Use a clarified stock to make a gourmet Consommé.  Recreate Mom’s Chicken Noodle Soup with a custom Viande Premier Base.   Make a stir-fry with a savory flavor.   Bring your dish together in a wok, a pot or a steamer with your own unique flavor.

BEEF BASES

When it comes to beef – it’s all about the base!  Our beef bases create depth of flavor and a delightful texture.  Starting with our experience with beef sirloin, roasted beef, and Au Jus, our formulations  can be powdered, clarified stock concentrate and more.  Our flexibility is endless.  We are experienced in developing organic, reduced sodium and vegetarian beef flavor solutions which are Halal Certified, and have the creative capability to satisfy any certification needs.

With the flavor of strong, roasted beef drippings, you can also enjoy an Au Jus as a sauce or dip without basting and roasting for hours.

VEGETABLE/MIREPOIX BASES

Aromatic vegetables, herbs and spices provide deep, well-rounded flavors and pleasing aromas when paired with soups and main dishes alike.  We specialize in a wide range of options from Sautéed Mirepoix, Natural Mirepoix, Vegetable, Vegan, Organic Vegetable, Mushroom, Roasted Garlic, Roasted Onion, Caramelized Onion and Roasted Red Bell Pepper.

Vegetable bases are ideal to add flavor and depth to your rice, pasta, potato or vegetable dishes. Use as a rub, cure or marinade for meats, fish or poultry.  And they are powerful when used to add complexity and depth to Au Jus and stocks.

SEAFOOD BASES

JMH Premium® Seafood Bases provide clean, distinctive flavors to all of your seafood recipes. Many competitive seafood bases taste strongly of fish without a clear flavor of the protein on the label.  That’s not the case with our seafood bases, which will cost-effectively boost flavor. Use a clam base to make the perfect clam chowder, or a lobster base for a delectable lobster bisque.  And we create other seafood flavors as well – such as Shrimp, Lobster, Clam, Crab, Shellfish and Premium Fish Bases.

PORK BASES

Pork bases will add a savory richness to your Ramen soup, Pork Chow Mien and other Asian entrees.  Or use a ham base to add flavor to your Ham Fried Rice. Rub Pork Base on chops and roasts for extra depth of flavor.  Make a delicious pork gravy or add a Ham Base as a great addition to Country Gravy for any meal from breakfast to lunch and dinner. Pork and ham bases are a great foundation for soups. Try it with Ham and Bean or Split Pea Soup, or any broth where you desire a smokey ham flavor.  And of course, you can never go wrong with Bacon!

CHILI BASES

Using one of our custom Chili Pastes saves the time required to roast, peel and chop peppers and will provide your dish a zesty, savory, smoky, sweet and spicy notes for deliciously hot dishes.

A few key details about our products and our custom formulations...

Our Clarified Stock Concentrates are unlike any other product in the industry. Designed to replace individually prepared stocks, these concentrates provide you with bold clear flavors for use in Marinades, Sauces, Au Jus, and Consommés. Because they have 50% less sodium than most “standard” bases – they will handle reduction without sacrificing texture or flavor. Examples include:

  • Viande Premier Bases – French for “premium meat”, these are classical meat-first bases. They contain robust roasted flavors and balanced mirepoix notes. Our versatile Chicken and Beef versions are true kitchen workhorses.
  • Roasted European Flavor Bases – Favored by many Northern European Chefs, these bases are used extensively in large production applications. They create clear broths with savory flavor and just a hint of sweetness.
  • Our customized flavor solutions include recipe development and enhancement, and we’ll do the heavy lifting when it comes to taking your flavor combinations to commercialization.
