Trimmed Beef Short Ribs (5 inch bones - approximately 3 - 4 lbs.)
JMH® Demi Starter, prepare as per directions on container
Red Wine
Onion, diced
Carrots, peeled and 1/4" sliced
Celery, cut 1/2" in length
Mushrooms halves
Tomato Purée
Garlic cloves, split
Rosemary, 4" fresh sprigs
Thyme, 4" fresh sprigs
Cracked Black Pepper
Sea Salt

Directions (Makes approximately 4 two-rib portions):
1.Heat pan on medium heat.
2. Add olive oil and sear short ribs on all sides.
3. Add vegetables, tomato puree, wine and demi glace.
4. Place ribs in a roasting pan and pour the stock ingredients over the ribs.
5. Cook for 90 minutes on one side (covered with lid or foil).
6. After 90 minutes turn the ribs to the other side and finish cooking for 60 minutes. |
