Directions (Serves 6 - 8):
1. Heat butter and sauté the onions. Add bay leaf, thyme and peppercorns. Cook 1 - 2 minutes on medium heat.
2. Add red wine and reduce by half. Strain and save liquid.
3. Heat water and add chicken base, demi-glace and wine reduction. Simmer and cook for 10 - 12 minutes. |
