Domestic White Mushrooms, sliced
Baby Bella Mushrooms, quartered
Oyster Mushrooms, split
Shitake Mushrooms, julienne

Directions (Serves 4 - 6):
1. Heat 1/2 ounce of olive oil in sauté pan and sear the white mushrooms until caramelized.
2. Add 1/2 ounce of olive oil and the baby Bella mushrooms. Cook for 3 minutes.
3. Add 1/2 ounce of olive oil and add the shitake and oyster mushrooms.
4. Add butter, shallots, bay leaf, thyme, papper and garlic. Cook briefly and add brandy.
5. Reduce brandy until nearly dry and then add red wine and reduce by 2/3's.
6. Add prepared demi starter and simmer for 15 - 20 minutes |
